I have tried many different recipes for sugar cookies and although I don’t make them very often, I want to find the perfect recipe this Christmas. My kids are big fans of the rolling and cookie-cutting process, so I figure I had better get a good recipe, hopefully one that is fail-proof. When you’re cooking with a 3 and 4 year old, there is always an element of risk involved. You never know when an entire egg will be haphazardly tossed into the mixing bowl, or even if the contents of the bowl will make it to the oven at all. Mishaps happen with kids, and it’s all part of the process I suppose?  Remind me that I said that the next time I am cleaning up a huge mess, and cursing my daughter who manages to destroy my kitchen every time we bake together 🙂 What she lacks in judgment and sensibility, she makes up for in enthusiasm!

This is a great recipe, so I think it will be the project du jour. Now, I’m not promising to get all cute and put icing on the entire lot of them – just so you know, I don’t *do* icing! It’s far too fiddly and complicated. That, and I don’t own all those fancy-schmancy tools for this job. I prefer to just slap some icing on a cookie and call it done!

Anyhow, we’re off to make sugar cookies – here’s the recipe:

Sugar Cookies

1 1/2 cups butter, softened

2 cups white sugar

4 eggs

1 teaspoon vanilla extract

5 cups all-purpose flour

2 teaspoons baking powder

1 teaspoon salt

  1. In a large bowl, cream together butter and sugar until smooth. Beat in eggs and vanilla. Stir in the flour, baking powder, and salt. Cover, and chill dough for at least one hour (or overnight).
  2. Preheat oven to 400 degrees F (200 degrees C). Roll out dough on floured surface 1/4 to 1/2 inch thick. Cut into shapes with any cookie cutter. Place cookies 1 inch apart on ungreased cookie sheets.
  3. Bake 6 to 8 minutes in preheated oven. Cool completely.

A few hours later…

So, we made the cookies, and while they are good, they are not *great* so, back to the drawing board as they say! If anyone has a great recipe for sugar cookies, please feel free to share it here 🙂
