I love the new PC fresh herbs at my local grocery store! They come all ready to use in these neat little plastic boxes and at this time of the year when I don’t have my back-yard herb garden to “snip” from, this is the next best thing.
I fell in love with basil this summer when our neighbour brought us a huge bag of it, fresh from her garden. There isn’t any doubt that fresh herbs are by far the best way to add flavour to your food, and already I am looking forward to the spring so I can plant a whole bunch of it in my own herb garden. But spring is a ways away, so until then I’ll just keep buying the PC herbs.
This is a light and summery recipe for delicious wraps with a light basil flavour.It may not be summer outside, but we can still eat as though it is, inside!
Chicken Wraps with Basil Mayonnaise
1/3 cup light mayonnaise
1 TBSP fresh basil, chopped
2 cloves garlic, minced
4 large spinach or basil flavour wraps
12 slices cooked chicken breast
1 red pepper, sliced into strips
1/4 red onion, sliced
2 cups leaf lettuce, torn
Combine mayo, basil and garlic in a small bowl, and stir well. Lay wraps flat and top each one with the mayo topping, dividing between the 4 wraps, and spreading over each. Next, top each wrap with 3 slices chicken, red pepper strips, onion and lettuce. Roll up into log shapes, and secure with a tooth-pick.

I wondered what you do about cooking with fresh herbs in the winter. I find that when I buy a big bunch of whatever for the dish I am making, that the rest of it goes bad in the fridge!! Such a waste. Any tips for me, lovely lady?

Well, first, I’m going to have to say that the PC ones are a great idea, most stores that carry President’s Choice sell them for $2, and the size is not overwhelming, so normally, I end up using most if not all of what I buy! For herbs such as cilantro that come in large bunches, I make several recipes at once (ie: salsa, butter chicken, mango bean salad.etc) that uses up what I have…
I also have a bunny! He helps with the rest 😉
I wish that I was as saavy and gifted as you in the cuisine department! Do you freeze your several recipes at once?

I think most recipes can easily be frozen – I like to experiment with it, and see what can and cannot be successfully frozen! My Grandmother, bless her heart, always froze milk – *not* such a good idea ;-)Milk at Gramma’s always tasted a little odd!

Not sure about the other herbs, but I bought a big bunch of basil from a farmer’s market a few weeks ago. I was worried about it going bad too, so I asked the lady who sold it to me if I could freeze it and she said yes! Just lay the leaves out on a cookie sheet in flat single layers with saran wrap separating them. Then once they’re frozen take them out and put them in ziplock bags, you can fit more in this way. Then whenever you need them in a recipe just pinch the leaves off in bits as you use them! I’ve been using them in tomato sauces lately, mmm it just can’t be beat for flavour!
