You know how they say Mom’s are always right? Well, turns out that’s true! I finally caved and made my Mom’s sugar cookie recipe today. I was afraid of them for some time, after my Mom’s horror stories about how the dough gets crumbly, and is difficult to work with. Well, yes, the dough was crumbly, but I found a great solution – just roll into logs, chill then slice! Voila! Pefect sugar cookies ready for icing. They have a wonderful flavour, and just the right crunchiness – a Merry Christmas treat! So, lesson learned? Listen to your Mother!
Mom’s Sugar Cookies
Cream Together:
1 cup shortening
1 cup white sugar
Add:
1 egg, and mix well
Next Add:
2 cups flour
1 tsp baking powder
1/2 tsp baking soda
Roll dough into 2 log shapes, wrap each in a sheet of parchment paper, or place in a large ziplock bag, and refrigerate. Once chilled, slice, and bake 7 – 8 minutes at 375 degrees F. Let cool, and ice with your favorite festive colours.
My mom’s are better, but whatever. 😉 Try adding lemon extract. You’ll be amazed at the difference it makes. By the way, I am way too chicken to try my mom’s recipe.
Mmmm! I will try that for sure – that might even moisten them up enough to hold the dough together…
I use good quality vanilla extract, but basically the same recipe.
Am addicted to banana muffins, best with walnuts and chocolate chips for an extra treat, great for quick breakfasts.
