It’s been really cold here these past few weeks. Rick Mercer from CBC has been known to refer to these short days of winter as the “Canadark” and agreeably, it sure feels like we’re in the midst of that right now. I find myself pining away for my gardens. I miss the herb garden the most – fresh thyme, basil, rosemary, chives…I want summer back!

Although summer is months away, at least you can take comfort and stay warm with good meals just like this one…

Beef Goulash

1 pound stewing beef
4 onions, diced
2 TBSP oil
1 1/2 TBSP flour
3 tsp fresh chopped parsley
Salt and pepper to taste
2-3 tsp paprika
2 cups beef or chicken stock
1/2 cup light sour cream

Cut beef into small pieces. Combine flour and spices. Dip meat in the flour mixture, and set aside. Brown onions in oil, remove from pan. Brown meat. Return onions to pan with the meat, and add the beef stock. Adjust seasonings, adding in paprika and salt and pepper if desired. Simmer on low for at least an hour until beef is tender. Right before serving, add sour cream and parsley. Serve with hot noodles.
