So, I didn’t get the pierogies done today as planned – I know, my bad! I was thoroughly enjoying an afternoon to myself. I made jewelry, went for a long walk, and just enjoyed some quality time with me, and the thought didn’t even cross my mind until mid afternoon. I will make them soon, I promise. Until then, here is another recipe for potatoes that I just made.
Garlic and Parmesan Mashed Potatoes
4-6 medium potatoes, peeled and quartered
5 cloves garlic, peeled and left whole
1 TBSP butter
2 TBSP milk
2 TBSP fresh parsley, chopped
2 TBSP fresh parmesan cheese
Boil the potatoes along with the garlic cloves, until potatoes are fork tender. Drain and mash the potatoes with the garlic, or whip with hand mixer. Add butter, milk, parsley and parmesan cheese, and stir well to combine.

i do this all the time, but i don’t put in parsley

A friend fried chopped garlic in butter before adding to the potatoes, very tasty! Growing parsely in the garden, or as a potted plant is easy too, and always tastes better fresh!
