It’s definitely soup weather these days! When the warmer early fall starts to fade and the cool late fall days come along, it’s time for some easy soup recipes 🙂 This one was invented in my own kitchen this morning, using what we had on hand and it was simply delicious!
Potato, Leek & Bacon Soup
1 large leek, chopped
8 strips bacon, chopped
2 stalks celery, chopped
6 medium potatoes, peeled and chopped
salt & pepper
1/2 cup fresh parsley, chopped
6 cups milk
Saute the chopped leek, bacon, celery and potatoes until starting to brown on edges. Season with salt and pepper and transfer to a large stock pot. Add parsley and milk and simmer on medium heat stirring on occasion for about an hour. Puree with a hand blender, and serve!
