These Banana Muffins are easy, delicious and quick to prepare. Plus, you probably have everything you need to make them in your kitchen right now. A favourite with kids and adults alike, these moist muffins are sure to please.
I have yet to meet someone who doesn’t love my Banana Muffins. I have many loyal followers who’ve been making these since day 1 – that’s nearly 14 years now!
Between the mixing and baking, the entire process only takes about 30 minutes.
Ingredients
- 3 or 4 large bananas, mashed (the more bananas the moister)
- 1/2 cup white sugar (original recipe calls for 1 cup, but I don’t like them too sweet)
- 1 egg, slightly beaten (or equal amount of egg replacer)
- 1/3 cup melted margarine or butter
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1 1/2 cups flour
A Quick Note About Substitutions
These days it is common for folks to need to substitute certain ingredients due to dietary restrictions. If this is the case, this is a great recipe for accommodating substitutions. I’ve made them and forgotten the egg entirely, and they still turned out just fine. Another tip if you are short a banana or two, is to substitute applesauce for one banana. I find about 1/2 cup does the trick. In fact, you can omit the bananas all together to make applesauce muffins!
Instructions
- Mix the mashed banana, sugar, egg and margarine together. Set aside.
- In a separate bowl, mix together baking soda, baking powder, salt and flour.
- Mix wet and dry ingredients all together!
- Pour into greased muffin tins.
- Bake in 350 °F (177 °C) oven for approximately 20 minutes.
Your Stand Mixer is Your Best Friend in Baking
I love my mixer, and it’s gotten a lot of use throughout the years. I like to do most of my baking in my mixer because it not only saves time, it makes clean-up that much easier. One bowl to wash up at the end? Yes please!
Traditionally in baking it is important to mix wet and dry ingredients separately, however, I have made this recipe both ways and I have not noticed any difference in their overall taste, so if you’re anything like me, you may wish to just toss it all together.
Baker’s Notes
These Banana Muffins are much more flavourful the next day, and they freeze very nicely too!
If you like walnuts, you can throw a handful of those in there as well for some added flavour and texture, or try adding chocolate chips, or better yet, BOTH. I also add in seasonal fruits like strawberries on occasion.
If you want to spice them up a little, you can add a tsp of cinnamon, and a little nutmeg as well. They smell fantastic baking when you add the spices. I always made mine plain when the kids were little, but they are teenagers now and spice is okay.
These are the best muffins I have ever made from scratch. Used 4 bananas (3 were REALLY ripe). I added about 4 ripe strawberries cut up real small and a small handful of white chocolate chips. They are amazing!

I made these muffins last night….. FANTASTIC! I used 5 overripe bananas and added chopped walnuts and some almond extract. They came out super moist and very flavorful…. I’ll be making these again in the future 🙂

I made an accidental “fat-free” version of these muffins (yes, I left the butter in the microwave!) with walnuts, and they still turned out perfect and very tasty!

Easy is right! The kids in my preschool class made these today, they are 3-4 years old and needed very little help from me. They loved eating them too! We used wheat flour for part of the flour. Thanks for easy and kid friendly!
I was looking for a healthy muffin recipe as I have a lot of diabetes in my family and am always trying to find something good with less calories. I modified the recipe to the following ingredients and I think they were still very good, although I’m sure the “real” butter and sugar would make them even better.
I used 4 large bananas
instead of the sugar I used 3/4 cup of Splenda
instead of the butter or margarine I used 1-4 oz. container Activia light vanilla
instead of regular flour I used whole wheat flour
I also made 6 large muffins instead of the 12 and baked them for about 5 minutes more.
Yummy!
I have made these muffins several times, every time a little differently depending on how many bananas I have. Chocolate chips are always good in them, added non-fat cream cheese once when I was short a banana, which was also a nice touch.

I’ve just baked a batch of these muffins & they are awesome! I have used many, many recipes in the past & although all of them were tasty, this one beats them all. For the sugar I used 1/4 cup white & 1/4 cup splenda. And I added about a cup of semi sweet chocolate chips. This recipe has earned its place among my favourites! Thanks.

These are the ‘best’ muffins !! I have been making them for the office for a few months, and from there they have been made at several employees homes .. I tweaked the recipe a bit (4-5 bananas, less butter, added vanilla) … they are eaten so quickly, you go turn around, 7 of them are gone.

I tried this banana bread (added 1 cup walnuts), and I’m not one to leave anything after I try something. Mostly cause nothing is so amazing it brings to me to write anything. But this bread, it’s to die for. I knocked my socks off .. and this is really saying something, as I can’t bake to save my life. I will make this time and time again, I might even “hide” banana’s from my husband so when they are over ripe I can make again. ^-~ (11/10)

With 4 kids and a muffin monster for a husband, I put these in mini muffin tins to make them last a little longer, and they are easy to pop in your mouth that way. They are great for the office too!

Easy and tastie muffins! Excellent way to use up ripe bananas and the kids love them! After cooked you can make them fun and spread some peanut butter on top and sprinkle with chocolate chips or raisons! “YUM”!!!!!
I’m so excited to try this recipe! I woke up in the mood to bake this morning. My only concern is the fact that I see everyone using really ripe bananas, but I was about to head to the store to pick some bananas up specifically for this recipe. Should I increase the amount of banana if they aren’t super ripe?
This REALLY is a very good recipe….I like to add semi-sweet chocolate chips to mine. They are VERY moist and taste very banana like!!!

Absolutely delicious!!!! Just made these this morning for the first time and they are a big hit with the family. My six year old son (a very picky eater) scarfed down two. Will be making these again for sure!
I used half a cup of brown sugar and half a cup of white, as well as some cinnamon and a 1/2 tsp of Vanilla extract. It makes for a sweeter muffin if you DO happen to have a sweet tooth, and the cinnamon adds a nice aftertaste. I like them best with a cup of semisweet chocolate chips, though. So tasty- this is the first recipe I’ve come across that I liked as much as the one from Muffin Mania. I love how much you can do with these.
Due to a wheat intolerance, I made these muffins subsituting brown rice flour equally for the wheat flour. Turned out TERRIFIC! My husband ate one and couldn’t tell the difference.

Love these I never bake but thought it would be fun to try. First round I only had 1 cup of flour in the house so I added 1/2 cup of pancake mix. They turned out amazing 🙂 I even went out and bought more flour and made another dozen the same night. Everyone loves them. Perfect for school functions especially when its a peanut free event.
