These Banana Muffins are easy, delicious and quick to prepare. Plus, you probably have everything you need to make them in your kitchen right now. A favourite with kids and adults alike, these moist muffins are sure to please.
I have yet to meet someone who doesn’t love my Banana Muffins. I have many loyal followers who’ve been making these since day 1 – that’s nearly 14 years now!
Between the mixing and baking, the entire process only takes about 30 minutes.
Ingredients
- 3 or 4 large bananas, mashed (the more bananas the moister)
- 1/2 cup white sugar (original recipe calls for 1 cup, but I don’t like them too sweet)
- 1 egg, slightly beaten (or equal amount of egg replacer)
- 1/3 cup melted margarine or butter
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1 1/2 cups flour
A Quick Note About Substitutions
These days it is common for folks to need to substitute certain ingredients due to dietary restrictions. If this is the case, this is a great recipe for accommodating substitutions. I’ve made them and forgotten the egg entirely, and they still turned out just fine. Another tip if you are short a banana or two, is to substitute applesauce for one banana. I find about 1/2 cup does the trick. In fact, you can omit the bananas all together to make applesauce muffins!
Instructions
- Mix the mashed banana, sugar, egg and margarine together. Set aside.
- In a separate bowl, mix together baking soda, baking powder, salt and flour.
- Mix wet and dry ingredients all together!
- Pour into greased muffin tins.
- Bake in 350 °F (177 °C) oven for approximately 20 minutes.
Your Stand Mixer is Your Best Friend in Baking
I love my mixer, and it’s gotten a lot of use throughout the years. I like to do most of my baking in my mixer because it not only saves time, it makes clean-up that much easier. One bowl to wash up at the end? Yes please!
Traditionally in baking it is important to mix wet and dry ingredients separately, however, I have made this recipe both ways and I have not noticed any difference in their overall taste, so if you’re anything like me, you may wish to just toss it all together.
Baker’s Notes
These Banana Muffins are much more flavourful the next day, and they freeze very nicely too!
If you like walnuts, you can throw a handful of those in there as well for some added flavour and texture, or try adding chocolate chips, or better yet, BOTH. I also add in seasonal fruits like strawberries on occasion.
If you want to spice them up a little, you can add a tsp of cinnamon, and a little nutmeg as well. They smell fantastic baking when you add the spices. I always made mine plain when the kids were little, but they are teenagers now and spice is okay.

I just made a double batch of these amazing banana muffins and added butterscotch chips instead of the the chocolate chips… They are SOOO good. My house smells like heaven and I can’t wait for my husband to try these tonight when he gets home! He’s going to think I’m a genius! LOL!

Oven timings and temperature would have been more handy as well as metric weights. Waitig for the results in assme around 25 mins!!
I only had two bananas. I substituted 3/4 cup sour cream. Used half a cup of sugar and some honey. Scrumptious!
Im Actually making these mufffins right now. There in the over. I hope there good. I have a speet tooth so I put 1/2 Of brown sugar and 1/2 a cup of white. I also Used butter.
They seem to be cooking fast? The outside tin part is already brown and it’s been about 5 mins? I’ll Just keep checking and see what happends. 😛

Great basic banana muffin recipe. So simple to follow, and really lovely to eat.
I added a good handful of walnuts to the banana bowl, and good sprinkle of nutmeg to the dry bowl.

If you don’t have any baking soda on hand, I found that an extra teaspoon of baking powder worked in a pinch.
I substituted half a cup of flour with oats to give it a faux nutty texture (my roommate is allergic to nuts) and it worked out well)
I love these!! My son does not eat gluten so we used corn flour and applesauce instead of butter and they turned out fantastic!!!

I just fiddled around with the recipe, here is what I did, 2 egg whites instead of 1 egg, 1/2 cup olive oil instead of butter, 1/4 tsp of salt, 1 cup white flour, 1/2 cup whole wheat flour and then 1/2 cup dried cranberries. Now that should be a bit healthier. Thanks for the basic recipe.

Hi there Sharon! Yes, you can use either apple sauce, or grated apples (I have done both and both are so yummy) as well as many other fruits. In terms of the measurement of the fruit, I would guess about 1 1/2 cups. I tend not to measure when I bake recipes that I make often, but I think that amount should be fine for these muffins. Just remember, if using sweetened apple sauce, cut down the sugar in the recipe.

These are absolutely the best muffins around. These muffins are why my daughter’s second grade class think I am “the greatest cook in the world!” By cutting down on the sugar-I think they make a great morning snack. I like to make them for the whole class.

Fantastic! I managed to mix things in all the wrong order on accident and still they were great! I added cinnamon, used soft brown sugar instead of white, and also used 5 bananas. (I have problems with often making super dry muffins). Boyfriend is very happy I have finally used up all the frozen bananas I have been collecting!! This recipe was not only easy but fuss-free, which I enjoyed trying this morning (10/10/2010). Since I will be having friends from Ireland visiting soon,though I’d try this recipe. It proved wonderful and turned out well. Moist and delicious. Melts in your mouth.

With 4 boys under 2, it’s amazing that I have bananas long enough for them to get spotted, but we’ve had the stomach flu going around the house and the bananas were not eaten fast enough! I can’t stand eating spotted bananas… I spent a good part of the boys’ naptime looking for a recipe that didn’t have sour cream, yogurt, or buttermilk that seemed perfect for me! This was the one I chose and the muffins are so moist and tasty!!! Have to say I cooked them perfectly as well. Our oven isn’t the most reliable when it comes to cooking times. I had them in for about 17 minutes, just long enough to see a little browning around the edges. I can’t wait to try adding nuts and chocolate chips! (Only skipped those additions this time because we’re still in recovery from the flu.) Thanks a million Cat! 🙂

I just made these this afternoon after finding the recipe on google this morning! They were very easy to make. Haven’t tasted them yet as they are still cooling but they look yummy!
Only thing I wasn’t sure on as it didn’t state was what kind of flour to use. I haven’t baked muffins before and haven’t made cakes on my own since I was a kid so I guessed and went for self raising as it had cakes on the packet! This is probably something very obvious to most people so I do apologise!

I have tried a few different variations of this and it ALWAYS comes out well! Everyone LOVES these muffins!
Hoewever I have noticed that doubling the recipe doesn’t produce the same nice moist results as just a single batch.
I just experimented with whole wheat flour instead of white flour and they are still AMAZING!
I also add flax with dark chocolate to my muffins and they are sooo moist and delish! A tablespoon or two of vanilla soy milk also gives it that extra YUM!
