These Banana Muffins are easy, delicious and quick to prepare. Plus, you probably have everything you need to make them in your kitchen right now. A favourite with kids and adults alike, these moist muffins are sure to please.
I have yet to meet someone who doesn’t love my Banana Muffins. I have many loyal followers who’ve been making these since day 1 – that’s nearly 14 years now!
Between the mixing and baking, the entire process only takes about 30 minutes.
Ingredients
- 3 or 4 large bananas, mashed (the more bananas the moister)
- 1/2 cup white sugar (original recipe calls for 1 cup, but I don’t like them too sweet)
- 1 egg, slightly beaten (or equal amount of egg replacer)
- 1/3 cup melted margarine or butter
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1 1/2 cups flour
A Quick Note About Substitutions
These days it is common for folks to need to substitute certain ingredients due to dietary restrictions. If this is the case, this is a great recipe for accommodating substitutions. I’ve made them and forgotten the egg entirely, and they still turned out just fine. Another tip if you are short a banana or two, is to substitute applesauce for one banana. I find about 1/2 cup does the trick. In fact, you can omit the bananas all together to make applesauce muffins!
Instructions
- Mix the mashed banana, sugar, egg and margarine together. Set aside.
- In a separate bowl, mix together baking soda, baking powder, salt and flour.
- Mix wet and dry ingredients all together!
- Pour into greased muffin tins.
- Bake in 350 °F (177 °C) oven for approximately 20 minutes.
Your Stand Mixer is Your Best Friend in Baking
I love my mixer, and it’s gotten a lot of use throughout the years. I like to do most of my baking in my mixer because it not only saves time, it makes clean-up that much easier. One bowl to wash up at the end? Yes please!
Traditionally in baking it is important to mix wet and dry ingredients separately, however, I have made this recipe both ways and I have not noticed any difference in their overall taste, so if you’re anything like me, you may wish to just toss it all together.
Baker’s Notes
These Banana Muffins are much more flavourful the next day, and they freeze very nicely too!
If you like walnuts, you can throw a handful of those in there as well for some added flavour and texture, or try adding chocolate chips, or better yet, BOTH. I also add in seasonal fruits like strawberries on occasion.
If you want to spice them up a little, you can add a tsp of cinnamon, and a little nutmeg as well. They smell fantastic baking when you add the spices. I always made mine plain when the kids were little, but they are teenagers now and spice is okay.
Gluten Free alterations to recipe made great muffins. The only thing wrong is I can’t stop eating them.
Alerations:
Gluten free flour mix (same amount as original recipe)
3/4 t xanthan or guar gum
1/2 c sugar (recipe calls for 1/3c)
Living gluten free does not have to be so restrictive.
Yum! I made mini muffins and baked them for about 12 minutes. Perfect!
Made these muffins today and they’re delicious! A couple revisions to the recipe…added 1 tsp vanilla and used 1/2 cup Demerara sugar instead of white sugar. Made them in mini muffin pans and sprinkled Demerara sugar on top of each one before baking. Absolutely perfect!
These muffins are great! I tried adding 1/2 cup of chopped walnuts and 1/2 cup of chocolate chips and they turned out perfectly. They were all eaten within a few hours. Thanks for a fantastic recipe!
thanks. this was seriously easy! i did cut on the sugar and also added some blueberries. hopefully my first baking session wont come out a flop.
These were good but mine came out with a slight baking soda taste :o( I followed the recipe to a “t” and used measuring spoons to measure the soda with. I will try making these again but maybe alter the amount of soda
Thanks for the recipe, these were good! I made mine with some choc chips, olive oil instead of the butter and put 1/2C of the flour as wholemeal.
The kids enjoyed helping me, especially mashing the bananas and even more they enjoyed helping me eat them.
Will definitely do this recipe again as I have another half a dozen bananas in the freezer waiting to be made into something.
I’ve tried these many times before and we love them. Today we used 3 large bananas and a tub of applesauce. I was making these with my 2 boys and both of them added an egg so we had an extra egg! (I put in a bit extra flour to compensate). We also added a tablespoon of sour cream and some chocolate chips. DELICIOUS!

I made these for the third time last night. I had no eggs in the house but I used 4 bananas and substituted the white sugar for brown. I also added 1/2 cup of semi-sweet chocolate chips and they turned out FAB. Super moist and delicious! These are quickly becoming a staple in my baked-goods repertoire. Thank you!

I’ve always said that if any dish requires flour, I’d most likely make a disaster of it. Not so with your wonderful recipe.
Since my son is allergic to eggs, we substituted “No Egg” into the mix.
Next time though we’ll be cutting down on the baking soda.

I really enjoyed these muffins. The changes I made were I substituted yogurt for the oil. I used whole wheat flour instead of white flour. I added 2 T of flaxseed. I added half cup each of chocolate chips and chopped nuts. They are excellent and you are correct (BEST BANANA MUFFINS EVER). thanks so much!!!!

I tried this recipe, the muffins came out fantastic, I only had two very ripe bananas, so I added one third cup of buttermilk for moisture and for ease of mixing. A dash of cinnanmon will give a touch of spice.I also added almonds as I did not have walnuts….simply delicious and quick to make….5 stars

I used 1cup of white flour and half cup of whole wheat. So awesome my kids gobble them up in a day!

This recipe is brilliant. And you can make it in a KitchenAid mixer too, and they come out brilliantly!! I did use the whole 1 cup of sugar, and they tasted really good and great for a childrens party or something like that. THANKS for the amazing recipe. 🙂
I love them this is going to be the 2nd time I’m making them, only this time I added thinly chopped walnuts and they made them taste 100 times better, not that the original recipe wasn’t great which it was!!
so so yum, beautiful by themselves, but to jazz them up a little for a morning tea I had, I piped some caramel into the center of each muffin….. a total winner!!

I have just made a batch adding 1/4 cup soya milk (instead of O.J.) like the other person did as well as a flavoured yogurt and sunflower seeds.
Will let you know how they turn out. Going into oven now.
Well, they may have turned out much better had I remembered to add the flour. I used the 1/4 cup soya milk instead of the OJ, flavoured yogurt & sunflower seeds . So, will try another time with flour.

There isn’t much that I can’t destroy in a kitchen…however, I have found great success with these muffins! I am an American living in Central America. I needed something that was healthy, hearty and didn’t need to “stay cold” for my kids’ lunches. Trying to think “outside the box”, I stumbled across this muffin recipe on the internet from Cat Can Cook. It has been the perfect solution to the lunch dilema! AND because the mango trees are producing fruit right now, I’ve mashed the mangos with the bananas and even added some sliced almonds for added goodness! My kids LOVE getting a muffin for lunch and I can make a bunch and freeze them…which makes making lunch in the morning MUCH easier! Thanks Cat Can Cook!
hi there, I also found this site by googling banana muffins. I my cupboards where very limited but my little boy was desprate to do a spot of baking so i made the best of what we had. I didnt use baking soda as we had run out and we used half white sugar and half dark brown and also had to use half margerine and half butter and we also added some raisins and crushed chocolate buttons. I found it very difficult to getting my little boy to put the mixture in to the muffin tin as he found the mixture very yummy. the smells from the over were amazing and the muffins were just divine!! thank you x
I melted the marg then forgot to add it they tasted great – told every one they were totally fat free they were very impressed.
I have also tryed them with cinimon and rasins. or a large handfull of chocolate chips (em not so fat free) always yummy.
Made these a few days ago with a five year old. They were so good that when I left them to cool on the table and started washing dishes, my helper decided to sample them. He loved them, and demonstrated this by taking a bite out of EACH and EVERY muffin! Thanks for the great recipe!

Had to comment. I’ve made these a few times and they always work out wonderfully! The best batch I ever made used margarine instead of butter and 6 bananas instead of 4. My friends and boyfriend went crazy for them. In half the batter I used chocolate chips and the other half frozen local blueberries. My friend keeps asking when I’ll be making more!
Yikes! Mine are in the oven, but will definitely be making 24. I must have not filled up the muffin cups enough?! I added mini-choco chips and I can’t wait to see how they taste. I’ve tried almost every recipe under the sun on my quest for a moist one.
Ive made these a few times. I use half cup of Brown sugar rather than white. Also Add about a tsp of cinn and 2 tablespoons of ground flax seed (omega 3).
My wife makes these all the time, they are so good and tasty, just one problem…..for some reason they dont seem to last long!;)
No doubt…this is a great recipe…so easy…and tastes great! Love love love them. One problem thou…they never last!
