These Banana Muffins are easy, delicious and quick to prepare. Plus, you probably have everything you need to make them in your kitchen right now. A favourite with kids and adults alike, these moist muffins are sure to please.
I have yet to meet someone who doesn’t love my Banana Muffins. I have many loyal followers who’ve been making these since day 1 – that’s nearly 14 years now!
Between the mixing and baking, the entire process only takes about 30 minutes.
Ingredients
- 3 or 4 large bananas, mashed (the more bananas the moister)
- 1/2 cup white sugar (original recipe calls for 1 cup, but I don’t like them too sweet)
- 1 egg, slightly beaten (or equal amount of egg replacer)
- 1/3 cup melted margarine or butter
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1 1/2 cups flour
A Quick Note About Substitutions
These days it is common for folks to need to substitute certain ingredients due to dietary restrictions. If this is the case, this is a great recipe for accommodating substitutions. I’ve made them and forgotten the egg entirely, and they still turned out just fine. Another tip if you are short a banana or two, is to substitute applesauce for one banana. I find about 1/2 cup does the trick. In fact, you can omit the bananas all together to make applesauce muffins!
Instructions
- Mix the mashed banana, sugar, egg and margarine together. Set aside.
- In a separate bowl, mix together baking soda, baking powder, salt and flour.
- Mix wet and dry ingredients all together!
- Pour into greased muffin tins.
- Bake in 350 °F (177 °C) oven for approximately 20 minutes.
Your Stand Mixer is Your Best Friend in Baking
I love my mixer, and it’s gotten a lot of use throughout the years. I like to do most of my baking in my mixer because it not only saves time, it makes clean-up that much easier. One bowl to wash up at the end? Yes please!
Traditionally in baking it is important to mix wet and dry ingredients separately, however, I have made this recipe both ways and I have not noticed any difference in their overall taste, so if you’re anything like me, you may wish to just toss it all together.
Baker’s Notes
These Banana Muffins are much more flavourful the next day, and they freeze very nicely too!
If you like walnuts, you can throw a handful of those in there as well for some added flavour and texture, or try adding chocolate chips, or better yet, BOTH. I also add in seasonal fruits like strawberries on occasion.
If you want to spice them up a little, you can add a tsp of cinnamon, and a little nutmeg as well. They smell fantastic baking when you add the spices. I always made mine plain when the kids were little, but they are teenagers now and spice is okay.

These are delicious! I made them last night – half with chocolate chips and they were a huge hit! They came out beautifully, but do not have the “peak” on them like in your picture. Any suggestions?

If I wanted to add wheat germ to this recipe, how would I do that and how much should I add? Do I reduce the amount of flour? Or do I just dump in a random amount… like 1/2 cup… ? Help!
I am suppose to be cleaning my house today but I’d rather be baking. When I discovered 2 forgotten bananas on a shelf begging to be made into muffins, I did a quick search and found this recipe. Even with only 2 bananas, they turned out terrific. I did use 2/3 cup of sugar and threw in the suggested chopped walnuts. I also used self-rising flour since I had plenty. This recipe will definitely become a favorite in my house. Now back to cleaning…until snack time;-)
I have commented on these wonderful muffins before, but thought I would let you know that I tried them tonight with half whole wheat flour and no sugar and they are excellent as always.

I liked cutting the sugar in half in previous recipies so that I could add a sprinkle of Cinnamon and brown sugar on the top as a sweet garnish. Today, my 2 year old daughter wanted pink sugar aprinkles today so I decided to give it a try! They tasted great and looked so girly! Fun idea for mommies like me.

I am not a baker. I pretty much never bake from scratch, I rely so much on those packages of pre-mix. This morning I saw some very very ripe bananas (black part>yellow) on top of my refrigerator and said, “…I want muffins.” I took this recipe and made a few changes. I used almost a full cup of sugar, I used whole wheat flour instead of white, I put in a half a teaspoon of vanilla, a sprinkle of cinnamon and a sprinkle of nutmeg. They turned out great! My boyfriend took one bite and jokingly said that I should almost be required to make them every week hahaha.
Just made them with chocolate chips and they are delicious!!! Highly recommended!! I ate half of them myself before anyone else knew I’d made them… oops
I just threw a batch in and was able to make 20 muffins, i made them with 1/3 brown sugar and 2/3 white sugar, i also added and pinch of cinnamon and nutmeg AND they turned out amazing every filling :3

I have used this recipe before and it has turned out great. This time I used 1/2 cup brown sugar and added a 1/2 tsp of allspice and 1/2 tsp cinnamon…in the oven now and smell heavenly=)
I have been searching for a fairly simple recipe to use up my bananas that are too ripe to eat. I usually make smoothies, but my blender broke, so I had to search for a way to the bananas before they get too overripe. I googled banana recipes and came upon this recipe. You have so many great reviews, so I suppose this is the recipe for me. I will make them tomorrow and report back.

This is my first time making muffins from scratch. I followed this recipe almost exactly, but i did make some changes. Instead of just using 1/2 cup white sugar, I used 1/2 cup white sugar and 1/2 cup brown sugar. I added 1 teaspoon cinnamon, 1 tablespoon honey, 1/2 cup mini chocolate chips, and i used 5 banana’s. All i can say is WOW! I will not be buying store bought muffin’s anymore. Thanks for the recipe.

Came across your recipe and thought I’d give it a whirl – SOOOooooo glad I did – they are delicious! I made them with butter instead of marg, but other than that kept the recipe as is. I have a 3 year old who is allergic to milk, eggs, wheat and nuts. I use a product made by Bob’s Red Mills to make pancakes and etc for him. We tried this recipe without the egg and it was GREAT! he was so excited to finally have a banana muffin that he liked.
I made the banana muffins with dried cranberries and walnuts, and they were amazing! I also used self-rising flour and left out the baking soda and baking powder, and cut the salt down to a pinch. Came out great!

Does anyone know how to make these gluten free?
I made them with 1 1/2C rice flour from the Asian market, and added 1/2t xanthan gum to the dry mix and they are fab. Also used egg replacer and Earth Balance, and they worked.
My four year old granddaughter absolutely loved these muffins. She actually chose them over candy! I made a double batch and used 3/4c. each white and brown sugar and added a couple handfuls of white chocolate chips. Delicious!
I made a batch of these today, and I love baking. This was the first time baking muffins. There were two kinda blackish bananas, and when I baked them, they tasted great!!! This recipe is a keeper. Yum!
AH!! I tried them without the sugar as i;m on a diet and was dying for something sweet…so i added cinnamon instead…they taste GR8!!!!!!!!!! 🙂
