These Banana Muffins are easy, delicious and quick to prepare. Plus, you probably have everything you need to make them in your kitchen right now. A favourite with kids and adults alike, these moist muffins are sure to please.
I have yet to meet someone who doesn’t love my Banana Muffins. I have many loyal followers who’ve been making these since day 1 – that’s nearly 14 years now!
Between the mixing and baking, the entire process only takes about 30 minutes.
Ingredients
- 3 or 4 large bananas, mashed (the more bananas the moister)
- 1/2 cup white sugar (original recipe calls for 1 cup, but I don’t like them too sweet)
- 1 egg, slightly beaten (or equal amount of egg replacer)
- 1/3 cup melted margarine or butter
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1 1/2 cups flour
A Quick Note About Substitutions
These days it is common for folks to need to substitute certain ingredients due to dietary restrictions. If this is the case, this is a great recipe for accommodating substitutions. I’ve made them and forgotten the egg entirely, and they still turned out just fine. Another tip if you are short a banana or two, is to substitute applesauce for one banana. I find about 1/2 cup does the trick. In fact, you can omit the bananas all together to make applesauce muffins!
Instructions
- Mix the mashed banana, sugar, egg and margarine together. Set aside.
- In a separate bowl, mix together baking soda, baking powder, salt and flour.
- Mix wet and dry ingredients all together!
- Pour into greased muffin tins.
- Bake in 350 °F (177 °C) oven for approximately 20 minutes.
Your Stand Mixer is Your Best Friend in Baking
I love my mixer, and it’s gotten a lot of use throughout the years. I like to do most of my baking in my mixer because it not only saves time, it makes clean-up that much easier. One bowl to wash up at the end? Yes please!
Traditionally in baking it is important to mix wet and dry ingredients separately, however, I have made this recipe both ways and I have not noticed any difference in their overall taste, so if you’re anything like me, you may wish to just toss it all together.
Baker’s Notes
These Banana Muffins are much more flavourful the next day, and they freeze very nicely too!
If you like walnuts, you can throw a handful of those in there as well for some added flavour and texture, or try adding chocolate chips, or better yet, BOTH. I also add in seasonal fruits like strawberries on occasion.
If you want to spice them up a little, you can add a tsp of cinnamon, and a little nutmeg as well. They smell fantastic baking when you add the spices. I always made mine plain when the kids were little, but they are teenagers now and spice is okay.

YUM! These turned out soooo good. I have made a few recipes I found online and they never turned out..I had lost hope I would one day make a delicious muffin until I found this recipe! Actually I used 3 mini loaf pans..cooked for about 45 mins. 🙂
These are VERY easy and wonderful. Because my hubby has an allergy to wheat, I used oat flour. In place of the egg, I used Chia seeds. That is the only thing I changed. The batter made 24 mini muffins and 6 regular size muffins. When hubby came home….. he ate 12 mini muffins in less than a 1/2 hour cuz he loved them. I will make them again!!

Real easy to mix up and quick to put in oven. Made a double batch added nuts and chocolate chips left the other plain. eather way very good. outstanding recipe!!!:)
Were very good. Kids have been gobbling them all up! I barely had any left over to save for the hubby at work, and the son in school! Added a bit of pure vanilla extract, dash of cinnamon, and nutmeg. Baked them in 8 mini loaf pan for about 35 mins in my convection oven at 325.

I can’t cook. And I can usually find a way to mess up a recipe. But I’ve made these muffins a handful of times and they are always delicious. There’s a batch in the oven that my 4 year old helped me make that we’re eagerly awaiting!!
Does the recipe for banana muffins require plain or self raising flour?
I made these with my 4 & 5 year old, they did most of the work themselves(which proves how easy it really is). We kept the recipe the same, with the exception of crumbling some brown sugar on top of them before popping them in the oven. The muffins were a hit! Everyone wanted seconds 🙂
In the oven, now. I added an apple, cinnamon, and chopped pecans. Anxious to try them.

Used some great product from KAF to bump-up these muffins. I like using whole wheat and oatbran flour as the base flour, and using their Whole Grain Blend with some great seeds in there …

These are so great when made vegan and gluten free! I used applesauce instead of butter and egg replacer in place of eggs and gluten free flour by King Arthur. I added Enjoy Life chocolate chips as well. I made them twice first time with coconut butter and second time with applesauce and the second batch rose well. Oh, and I also added some oats. Thanks!

I used Organic Whole Wheat flour and brown sugar, and added a tsp of cinnamon to the mix. My husband can’t keep his hands off them!! Very tasty. 🙂

I tried your banana muffin.After pouring in the moulds I found that my oven (mine is a fan assisted oven) has only upto 250 degrees. So I set it up at 250 since the receipe called for 350, It was kind of burnt.Could you let me know how much do we need to set up for fan assisted ovens.Thanks a lot.

@Nathan. Your oven is marked in degrees Centigrade and the recipe is in Farenheit. 350F is about 180C but with a fan assist I would bake them at 160C. Hope you don’t get burned offereings next time!

Wow, so easy and useful i have made about 4 diffrent types this month. I added dates, dried apricots, ginger and nuts all delicious! also i used a little less sugar and wholemeal flour the last few times so i can call them ‘healthy’. YUM . simple great recipe! Thanks
They are in the oven! i did change a few things,i used brown sugar instead of white as i like the taste more! Also i added brown sugar and cinnamon sprinkled on top of the muffin to make they crunchy on top!! 🙂
SO EASY, SO GOOD!! I made them into mini-muffins, bakes for 10 mins. I am only half done baking but looks like this will yield 48 mini muffins!
