These Banana Muffins are easy, delicious and quick to prepare. Plus, you probably have everything you need to make them in your kitchen right now. A favourite with kids and adults alike, these moist muffins are sure to please.
I have yet to meet someone who doesn’t love my Banana Muffins. I have many loyal followers who’ve been making these since day 1 – that’s nearly 14 years now!
Between the mixing and baking, the entire process only takes about 30 minutes.
Ingredients
- 3 or 4 large bananas, mashed (the more bananas the moister)
- 1/2 cup white sugar (original recipe calls for 1 cup, but I don’t like them too sweet)
- 1 egg, slightly beaten (or equal amount of egg replacer)
- 1/3 cup melted margarine or butter
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1 1/2 cups flour
A Quick Note About Substitutions
These days it is common for folks to need to substitute certain ingredients due to dietary restrictions. If this is the case, this is a great recipe for accommodating substitutions. I’ve made them and forgotten the egg entirely, and they still turned out just fine. Another tip if you are short a banana or two, is to substitute applesauce for one banana. I find about 1/2 cup does the trick. In fact, you can omit the bananas all together to make applesauce muffins!
Instructions
- Mix the mashed banana, sugar, egg and margarine together. Set aside.
- In a separate bowl, mix together baking soda, baking powder, salt and flour.
- Mix wet and dry ingredients all together!
- Pour into greased muffin tins.
- Bake in 350 °F (177 °C) oven for approximately 20 minutes.
Your Stand Mixer is Your Best Friend in Baking
I love my mixer, and it’s gotten a lot of use throughout the years. I like to do most of my baking in my mixer because it not only saves time, it makes clean-up that much easier. One bowl to wash up at the end? Yes please!
Traditionally in baking it is important to mix wet and dry ingredients separately, however, I have made this recipe both ways and I have not noticed any difference in their overall taste, so if you’re anything like me, you may wish to just toss it all together.
Baker’s Notes
These Banana Muffins are much more flavourful the next day, and they freeze very nicely too!
If you like walnuts, you can throw a handful of those in there as well for some added flavour and texture, or try adding chocolate chips, or better yet, BOTH. I also add in seasonal fruits like strawberries on occasion.
If you want to spice them up a little, you can add a tsp of cinnamon, and a little nutmeg as well. They smell fantastic baking when you add the spices. I always made mine plain when the kids were little, but they are teenagers now and spice is okay.

I substitute 1/2 cup of flour for oats. Gives them lots of texture. I love this recipe! It’s fool proof and everybody gets excited when I make these.

These are excellent! They’re so light- I was amazed! I doubled the recipe and used 7 medium bananas. I also added toffee bits and chopped walnuts to ours, which turned out to be an awesome combination.

I found this recipe a few months ago and haven’t stopped making these muffins since. I make them about once a week but I’ve been able to adjust the recipe to accommodate many different flavours even savoury.
I have worked as a cook in cafes in the past so i’ve done a lot of muffin baking. Your recipe is absolutely THE BEST. It’s so easy and so reliable (something many muffin recipes fall short in, I’ve found).

Well these muffins are so easy to make, moist, delicious, and the best i have ever tasted. I have made them about 8 times already in two months everybody that has tasted them loves them.

Started to play this afternoon…. I doubled the recipe and used 3 giant bananas, and 2 large zucchini, shredded. Ginger, lemon zest,cinnamon and sunflower seeds. Used buckwheat again and creamed the bananas with the coconut oil and eggs. A half a cup of yoghurt as well, because the b’wheat needs more wetting. 12 texas muffins later…..OMG sooooo yum! Xmas treats ‘extraordinaire’!!!!

Made these this morning, substituted whole wheat flour for the white flour and sprinkled some chopped pecans on top, they turned out wonderfully! Next time will try adding some chocolate chips too! Thanks!! Easy peasy!!

Excellent recipe! I was concerned with the half cup of sugar that they would not be sweet enough, but the bananas take care of the sweetness. This will be my go-to recipe when I need to use my overripe bananas!

I am very impressed with your recipe. My husband loved it and have been using this recipe since. For healthier options, I just used wheat flour, and canola oil instead of margarine or butter. for the nuts, i used walnuts for the 1st time, pecan the 2nd time and sliced almonds the 3rd time. They all well flavorful. BTW, How many cups will i put if i want to use honey instead of sugar? also, can you give me the recipe for carrot muffin? It is easier to freeze muffins than cake. I do need to slice them.

My 1st attempt to make muffins and it turns out so soft & fluffy!!! Thanks!!! I add a little twist in it. I butter up pan a little & grill the bananas & let em cool down. I think it adds more flavor. I use only 1/2 cup brown sugar as the caramelized bananas adds the sweetness. And I throw in lots of walnuts and sprinkle em on top too to give it that crunch!!
I like the muffins but unfortunately my kids did not! 🙁
Next time I’ll try it with only three bananas. They didn’t like how you could see and feel the banana. I like how simple and quick cooking this recipe is.

Why did I ever stop making muffins? I dunno… These just came out of the oven… I used Sprouted grain WW flour, and Dark brown sugar and 1/2c of chocolate chips. SOOOO yummy, how will I get through Dinner without eating another! They’ll be great in the kids lunch boxes (if they make it to tomorrow!)
