These Banana Muffins are easy, delicious and quick to prepare. Plus, you probably have everything you need to make them in your kitchen right now. A favourite with kids and adults alike, these moist muffins are sure to please.
I have yet to meet someone who doesn’t love my Banana Muffins. I have many loyal followers who’ve been making these since day 1 – that’s nearly 14 years now!
Between the mixing and baking, the entire process only takes about 30 minutes.
Ingredients
- 3 or 4 large bananas, mashed (the more bananas the moister)
- 1/2 cup white sugar (original recipe calls for 1 cup, but I don’t like them too sweet)
- 1 egg, slightly beaten (or equal amount of egg replacer)
- 1/3 cup melted margarine or butter
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1 1/2 cups flour
A Quick Note About Substitutions
These days it is common for folks to need to substitute certain ingredients due to dietary restrictions. If this is the case, this is a great recipe for accommodating substitutions. I’ve made them and forgotten the egg entirely, and they still turned out just fine. Another tip if you are short a banana or two, is to substitute applesauce for one banana. I find about 1/2 cup does the trick. In fact, you can omit the bananas all together to make applesauce muffins!
Instructions
- Mix the mashed banana, sugar, egg and margarine together. Set aside.
- In a separate bowl, mix together baking soda, baking powder, salt and flour.
- Mix wet and dry ingredients all together!
- Pour into greased muffin tins.
- Bake in 350 °F (177 °C) oven for approximately 20 minutes.
Your Stand Mixer is Your Best Friend in Baking
I love my mixer, and it’s gotten a lot of use throughout the years. I like to do most of my baking in my mixer because it not only saves time, it makes clean-up that much easier. One bowl to wash up at the end? Yes please!
Traditionally in baking it is important to mix wet and dry ingredients separately, however, I have made this recipe both ways and I have not noticed any difference in their overall taste, so if you’re anything like me, you may wish to just toss it all together.
Baker’s Notes
These Banana Muffins are much more flavourful the next day, and they freeze very nicely too!
If you like walnuts, you can throw a handful of those in there as well for some added flavour and texture, or try adding chocolate chips, or better yet, BOTH. I also add in seasonal fruits like strawberries on occasion.
If you want to spice them up a little, you can add a tsp of cinnamon, and a little nutmeg as well. They smell fantastic baking when you add the spices. I always made mine plain when the kids were little, but they are teenagers now and spice is okay.

I baked these this evening while baking a dinner casserole. After I put batter into 1/2 of the muffin tins, I added cocoa powder and some chocolate chips to the remainder of the batter. (I added just a bit of buttermilk for moisture to offset the dry cocoa powder.) The warm chocolate banana ones were delicious for dessert and I am saving the plain banana muffins for breakfast!

The BEST banana muffin recipe I have ever come across. The muffins are incredibly moist and totally delicious. I make these muffins with chocolate chips and macadamia nuts for a bit of indulgence!!

used the same recipe, but cooked my bananas with a little bit of honey, peanut butter, and bourbon before adding them to the mix. also used whole wheat pastry flour. um…yum <3

I have been making these with my son for three ( I think!! ) years! They are fantastic, so easy to make- we have been adding oats, chocolate, raisins, nuts, cinnamon, vanilla, simple icing, buttercream icing etc, etc- they are always lovely!

These muffins were very popular with my family, I loved the fact that you didn’t need to use a mixer and there was hardly any washing up to do afterwards, so much easier and faster than all the other recipes I have tried before. And the best part was how the muffins turned out, they were exactly how everyone describes them, delicious, soft, moist and fluffy! Thanks Cat, I will be using this recipe again and again.

Excellent recipe. I used whole meal flour instead with a teaspoon baking powder for lift and a quarter also of bicarbonate with a pinch of salt which meant I needed less sugar.
I used 200g but also used some oats in that amount, so 175g whole meal flour with 25g oats to make them healthier but should have substituted some sugar for honey but was in too much of a rush to think about it at the time.
I used 75g margarine/butter as don’t know what a third cup of fat would weigh.
If you do want to use cups to measure then use a teacup, which holds around 200ml of liquid. I have a steel cup I bought from ikea years ago which has graduations up the inside for measurements which is really useful. As long as you always use the same sized mug for all measures, it should be fine but I prefer weights personally.
The muffins were so lush & moist. Easy recipe, hard to go wrong. I ate 2 soon after coming out the oven as they taste best while warm I think.

I must admit. I was a little sceptical of this recipe…but. Having now made them I must say that my old recipe doesn’t compare to this one. Light, moist and fluffy. Simply the best I’ve ever had…and made. I drizzled chocolate on it. I can say that my clients will love this one. Thanks for sharing this one with us!

These are truly lovely and very moist. I used a full cup of sugar and found it just the right amount. Mine also contained walnut pieces. will certainly make them again – the trouble is they get eaten too quickly and one is never enough !!

These turned out very well. Used four VERY brown (nearly black!) bananas. Did 3/4 cup white and 3/4 cup whole wheat flour. Swapped 1/2 cup sugar for 1/2 cup Truvia. Melted 1/3 cup organic “Melt” spread (soy-free) in place of butter. Delightfully simple recipes are often the best.

I stumbled upon this recipe about 2 years ago and it instantly became a household favorite! The kids request it so often that I now double the order and freeze a few. Once the batter is made, I split it in 2 and add chocolate chips to one batch – so they can go to school – and then chopped walnuts to the other, for home consumption! GREAT RECIPE!!

Can you use this recipe with banana powder? My daughter works at a plant that produces organic banana powder and so we have access to that and would like to use it. How much water or other moisture would you have to use and how much powder to replace the bananas?

So delicious but I ‘ve got some problem. The muffin come deflate when come out the oven.what did i do wrong?
I used 1 cup of white flour, and a half cup of coconut flour…then added a cup of milk, 1/4 cup of honey and sprinkled the tops with brown sugar…turned out really well! Coconut flour is very dense but gives them a slightly different taste.
I made these and left out the sugar all together and they were still delish! I used four really over-rioe bananas so there was enough sweetness from them. I also used wholemeal flour. Beautiful!
