These Banana Muffins are easy, delicious and quick to prepare. Plus, you probably have everything you need to make them in your kitchen right now. A favourite with kids and adults alike, these moist muffins are sure to please.
I have yet to meet someone who doesn’t love my Banana Muffins. I have many loyal followers who’ve been making these since day 1 – that’s nearly 14 years now!
Between the mixing and baking, the entire process only takes about 30 minutes.


Ingredients
- 3 or 4 large bananas, mashed (the more bananas the moister)
- 1/2 cup white sugar (original recipe calls for 1 cup, but I don’t like them too sweet)
- 1 egg, slightly beaten (or equal amount of egg replacer)
- 1/3 cup melted margarine or butter
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1 1/2 cups flour
A Quick Note About Substitutions
These days it is common for folks to need to substitute certain ingredients due to dietary restrictions. If this is the case, this is a great recipe for accommodating substitutions. I’ve made them and forgotten the egg entirely, and they still turned out just fine. Another tip if you are short a banana or two, is to substitute applesauce for one banana. I find about 1/2 cup does the trick. In fact, you can omit the bananas all together to make applesauce muffins!
Instructions
- Mix the mashed banana, sugar, egg and margarine together. Set aside.
- In a separate bowl, mix together baking soda, baking powder, salt and flour.
- Mix wet and dry ingredients all together!
- Pour into greased muffin tins.
- Bake in 350 °F (177 °C) oven for approximately 20 minutes.
Your Stand Mixer is Your Best Friend in Baking
I love my mixer, and it’s gotten a lot of use throughout the years. I like to do most of my baking in my mixer because it not only saves time, it makes clean-up that much easier. One bowl to wash up at the end? Yes please!
Traditionally in baking it is important to mix wet and dry ingredients separately, however, I have made this recipe both ways and I have not noticed any difference in their overall taste, so if you’re anything like me, you may wish to just toss it all together.
Baker’s Notes
These Banana Muffins are much more flavourful the next day, and they freeze very nicely too!
If you like walnuts, you can throw a handful of those in there as well for some added flavour and texture, or try adding chocolate chips, or better yet, BOTH. I also add in seasonal fruits like strawberries on occasion.
If you want to spice them up a little, you can add a tsp of cinnamon, and a little nutmeg as well. They smell fantastic baking when you add the spices. I always made mine plain when the kids were little, but they are teenagers now and spice is okay.

I have a pre-natal class tomorrow and it is my turn to bring snacks:) Had all the ingredients for this quick and easy recipe in the cubboard~I too vamped the recipe just a bit…less sugar, 1/2 ww flour, 1/2 the margarine mixed with the other 1/2 peanut butter…added a tsp of cinnamon, some choc chips & poppy seeds too. They turned out fantastic! My best muffins yet! Thanx again, you saved the day:)
I’m going to try and substitute as much wheat flour as possible. But I don’t have a regular oven. Can anyone tell me a time variation for the microwave. I bake regular cakes in it (around 1c flour) at around 180degC for 35 mins.
Made them for the second time today and had to write. They are indeed fantastic. My 5 year old mashes the bananas and my 2 year old dumps in and mixes the dry. Moist with lovely texture – foolproof. I add a little vanilla and a few chocolate chips. My 5 year old actually asked me to leave the chocolate chips out the next time (and he loves chocolate!) because he thinks they don’t need them.

Just made these muffins for my grandaughters,I added some buttermilk and some ground flax,I thought a little dry and a little wet would be alright,i also melted some choc chips and spread them on top.I haven’t tasted them yet,I have to wait for the girls to rave and I know they will rave about them.I think this one will be a favorite.

This recipe is the best by far! I have tried many different Banana muffin recipes and this one is the best! So easy, and you are gauranteed to have everything you need right in your pantry! This gets 2 thumbs wayyyyyyyy up high for me!!
it was my first attempt at baking, and i used this recipe without an oven – AND it still turned out great!! i don’t have an oven so i simply steamed the muffins chinese-cake style. haha! thanks cat, and for everyone with all the helpful comments! ^_^

My husband and I live in the Caribbean and have huge banana trees. When they are ripe we have more than we can ever use. After giving most to friends,and eating our share, we freeze them right in the skin. When we want to bake, bread mostly, we defrost the number we need and they are so moist and flavorful. My husband always makes bread, so I asked if we can try some muffins for the holidays. We’ll add some dried cranberries or cherries- but I’m really excited to try Chocolate chips.

Wow thank you so much these were a huge success. I can’t wait to try the pumpkin muffin receipe. My question is with the pumpkin muffins you say to double the receipe and go a little heavier with the sugar. Will 1 cup do? Or did you mean double the sugar too? Thanks again for such GREAT muffins!
To answer Jennifer about the Pumpkin Muffins, you double the sugar, so use one cup in total, but I increase that slightly…so do, say, 1 1/2 Cups in total to make your double batch! Really, you just can’t go wrong. Then, add in raisins or nuts…you can play around with the spices too…Allspice or Pumpkin Pie spice would both do nicely 🙂

I ran these through Weight Watcher’s Recipe Builder and they are four points each. I tried it with marg. instead of butter, still four pts. Four or five bananas, still four points.
that should have said “three or four bananas” for 4 ww points.

Since I found this recipe I’ve made these muffins probably 6 times in the past 4 months. Everyone that tries them loves them too!! I’ve freezed them as suggested and they’re always just as good as before I pop them in the freezer!

I was having a look at WW site here in Australia and I came across the almost exact receipe as your banana muffins the only difference they have is 1 tblspn Honey and 1 teaspoon Nutmeg and cinnamon but they quote 1 muffin as 2 points! Almost worded the same as yours!

Try adding some blueberries…and while you’re at it, double the recipe and buy more bananas so they can start ripenning!!

I was looking on-line for a banana muffin recipe and came across yours. I made it this morning and am now sitting at my laptop, looking out on a gray day in the south of England, eating a wonderful muffin (yum!) and thinking about Guelph. I live in England now but I went to the University of Guelph long ago (1970-73) and then later lived in Fergus for nearly 7 years. Thank you for the recipe and the memories that it and your blog have brought back. I have two daughters also living here and I will pass it on to them.

I just baked these muffins with my 11 month old daughter. They were so easy and yummy. We both had to have one as soon as they were cool. We are going to get some pumpkin to make the Super Pumpkin Muffins tomorrow. Yum!!!!

Excellent muffins! Half sugar was a good choice. Made 12 medium sized muffins which were very yummy. I also glazed them with butter and honey, but if you want to be healthy just use honey!
Hi! Just stumbled on this recipe when I googled “easy banana muffins” and I L-O-V-E it! Take it from someone who can burn cereal, these things are foolproof. I’m just out of college, never baked anything in my life, have an oven that looks like it’s from 1927, and STILL managed to put these together and they taste fantastic! I used this recipe, but I only had two ripe bananas. So, I added 1/3 cup banana cream instant pudding mix and 1/3 cup sour cream. I also added 1/8 cup sugar. They were delicious! I’ve made several different kinds of muffins lately. My eleven year old said these are the best!
