These Banana Muffins are easy, delicious and quick to prepare. Plus, you probably have everything you need to make them in your kitchen right now. A favourite with kids and adults alike, these moist muffins are sure to please.
I have yet to meet someone who doesn’t love my Banana Muffins. I have many loyal followers who’ve been making these since day 1 – that’s nearly 14 years now!
Between the mixing and baking, the entire process only takes about 30 minutes.


Ingredients
- 3 or 4 large bananas, mashed (the more bananas the moister)
- 1/2 cup white sugar (original recipe calls for 1 cup, but I don’t like them too sweet)
- 1 egg, slightly beaten (or equal amount of egg replacer)
- 1/3 cup melted margarine or butter
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1 1/2 cups flour
A Quick Note About Substitutions
These days it is common for folks to need to substitute certain ingredients due to dietary restrictions. If this is the case, this is a great recipe for accommodating substitutions. I’ve made them and forgotten the egg entirely, and they still turned out just fine. Another tip if you are short a banana or two, is to substitute applesauce for one banana. I find about 1/2 cup does the trick. In fact, you can omit the bananas all together to make applesauce muffins!
Instructions
- Mix the mashed banana, sugar, egg and margarine together. Set aside.
- In a separate bowl, mix together baking soda, baking powder, salt and flour.
- Mix wet and dry ingredients all together!
- Pour into greased muffin tins.
- Bake in 350 °F (177 °C) oven for approximately 20 minutes.
Your Stand Mixer is Your Best Friend in Baking
I love my mixer, and it’s gotten a lot of use throughout the years. I like to do most of my baking in my mixer because it not only saves time, it makes clean-up that much easier. One bowl to wash up at the end? Yes please!
Traditionally in baking it is important to mix wet and dry ingredients separately, however, I have made this recipe both ways and I have not noticed any difference in their overall taste, so if you’re anything like me, you may wish to just toss it all together.
Baker’s Notes
These Banana Muffins are much more flavourful the next day, and they freeze very nicely too!
If you like walnuts, you can throw a handful of those in there as well for some added flavour and texture, or try adding chocolate chips, or better yet, BOTH. I also add in seasonal fruits like strawberries on occasion.
If you want to spice them up a little, you can add a tsp of cinnamon, and a little nutmeg as well. They smell fantastic baking when you add the spices. I always made mine plain when the kids were little, but they are teenagers now and spice is okay.


Great muffins! I made these for my kids tonight, I will pack in their lunches tomorrow. I made one small change/addition…I used Cat’s suggestion of 1/2 cup of sugar, to which I added 1/2 cup of black strap molasses (for the added iron for the kiddies). I mixed cinnamon sugar with margarine until it was like a dry grahm cracker crust, and sprinkled the sand-like mixture on top before baking, they had a crispy awesome taste afterward.

I am not good at baking anything…but guess what! These muffins turned out just magical. Soft, springy and delicious. I didnt bother to mix the ingredients separately. Just put everyhting in a bowl and whoa! The muffins disappeared within moments…thanks for this awesome recipe.

Im 11 and I find it really hard to make really easy recipies that dont need heaps of ingredients. They are really easy to make.
My daughter brought home a bag of very ripe bananas from school. (Kind of volunteered Mom to make banana bread for the class.) I have NO luck with banana bread at all so started surfing for an alternative. I doubled this recipe and got 3 dozen muffins. I followed exactly then added chocolate chips. I was wondering, could you substitute whole wheat flour for the white, all purpose flour? I have 3 bananas ripening as we speak and wanted to give this recipe a go. This recipe is so versatile you can use it as basic ingredient for any muffins. So far I’ve made: banana with chocolate chips, banana with oatmeal, banana and strawberry, just plain banana muffins. with the same recipe i substituted the bananas with mango and peach. So to add to my list, on the counter i have a batch of mango muffins, peach muffins and mango and peach muffins, and mango, peach and oatmeal. Last week, I made applesauce and oatmeal and my husband took it to his work the whole dozen, and it was a hit. Once again thank you for the recipe. If I just leave my husband alone, he would eat the whole batch of banana muffins in one sitting.

Thanks for a great recipe. I found it via Google. Using your recipe and combining the comments from others I did the following:
I didn’t use an egg. I used 4 bananas and an extra pinch of baking sode. I used 1 cup of flour, ½ cup of grahamsflour and wholewheat flour mixed, and a handful of oats. I also substituted the ½ cup of sugar with ½ cup of honey. Baked for 25 minutes.
DELICIOUS! And really low fat!

Was trying to figure out something to make for breakfast, since I was craving a whole wheat bagel with eggs, but nope, too many eggs since I already had that yesterday and the day before. (I am pregnant! lol!) And we had cereal last night so I knew my husband wouldn’t feel like cereal. We had 2 ripening bananas, so I thought to make banana bread, but when I looked up some recipes online, the ones I found all said they took about an hour to bake, and I didn’t have that much time since my husband would have to leave for work. So instead, I did a search on ‘quick, yummy banana muffins’, and came across this page. Wow, so many comments! Anyway there were so few ingredients, and I like tweaking a little, so I decided to give it a try. Good call on the sugar – I would have used honey instead if we had any, but we just had sugar. They were very sweet even with just half a cup – next time if I use sugar I might even use less. We only had two bananas. Next time I may also try applesauce instead of butter/oil – to make them healthier. Also, I used 1 cup of whole wheat flour, and 1/2 a cup of regular flour – we try to use a lot of whole wheat/whole grains these days. And, I sliced up an apple and through it in, along with a handful of raisins. It took EXACTLY 20 minutes to cook and was ready just in time before my husband had to leave for work – so we ate them warm and fresh out of the oven – delicious! We had 3 each and I have to admit that after he left, I had 2 more! No more until tomorrow! 😉 LOL! (It made exactly 12 decent sized muffins!) I think I have a new favorite but mine turned out still just a bit too sweet – maybe because of the extra raisins? 🙂
I know it will be repeating what seems like a million other people have said but I LOVE THIS RECIPE!!!! I felt horrible cuz I bought a bunch of bananas for my famous fruit salad and they started to get too ripe (the fruit salad absolutely must have very firm nanners to hold up to all the other fruit so typically I use greenish-yellow nanners) and I kept thinking of my Gram’s Nanner Bread recipe but it takes sooooo long and is best with walnuts in it and my roommates can’t have nuts. So I did a quick glance thru the 800 gazillion cook books I have and again came up with bread recipes that took forever. Then I did a web search and this was the first page I looked at and I have to say I couldn’t resist trying something that has so few ingredients and is so simple with such rave reviews. I am in the middle of spring cleaning and seemed to have lost my muffin pan so instead I used my mini loaf pans and ended up with 4 mini loaves (it did take about 10 minutes longer to cook). Unfortunately the first 2 were done during a TV show that my roommate and I watch almost religiously (it was the finale) and before the show was even over we had finished off both of the mini loaves. The funny part was that it was a cooking show and during the commercials we were joking that these muffins would make me win the show, then I had to share with my roommate that I got the recipe from you! 🙂

I love this recipe also. I made a slight alteration to mine. I like using between 1/2 C and 2/3 C honey in place of the sugar. I find they are more moist and they are healthier for the kids. I sometimes also add about a third of a bag of nestle mini chocolate chips for some variety.
My favorite muffin recipe by far. I want to share the recipe with family and friends but I don’t want them to know my easy secret. Hmm. This is the easiest, most consistent and overall best recipe. You can do *anything* to these muffins, and they always turn out! No need to beat the margarine though! Good luck!
Just made’em! They turned out pretty good. Except I think I taste the baking soda a bit more than I would like to. I measure one teaspoon with the special measuring spoons, so there is no chance I screwed it up. Maybe 1/2 teaspoon would be enough? What do you think?
These banana muffins are my absolute favourite. Hubby loves them too. He loves bananas in general but he forces himself to not touch the bunch so he can get me to bake these up. I have a big sweet tooth so I use the full cup of sugar. Absolutely amazing. 😀

I love this recipe. my family really does enjoy it. but i htought id give it a little something extra and befor i put it in the oven i mixed sugar and cinamin and sprinkeled it ontop. it really added a little somthing exra.
Can you use self rising flour instead of ordinary flour and baking soda and powder??
I used self raising flour, with no baking powder or soda and they were just lovely!
Even better the next day when they had gone all sticky on the top.
Delicious and easy-I have so many disasters in the kitchen, but this was a success!
