These Banana Muffins are easy, delicious and quick to prepare. Plus, you probably have everything you need to make them in your kitchen right now. A favourite with kids and adults alike, these moist muffins are sure to please.
I have yet to meet someone who doesn’t love my Banana Muffins. I have many loyal followers who’ve been making these since day 1 – that’s nearly 14 years now!
Between the mixing and baking, the entire process only takes about 30 minutes.


Ingredients
- 3 or 4 large bananas, mashed (the more bananas the moister)
- 1/2 cup white sugar (original recipe calls for 1 cup, but I don’t like them too sweet)
- 1 egg, slightly beaten (or equal amount of egg replacer)
- 1/3 cup melted margarine or butter
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1 1/2 cups flour
A Quick Note About Substitutions
These days it is common for folks to need to substitute certain ingredients due to dietary restrictions. If this is the case, this is a great recipe for accommodating substitutions. I’ve made them and forgotten the egg entirely, and they still turned out just fine. Another tip if you are short a banana or two, is to substitute applesauce for one banana. I find about 1/2 cup does the trick. In fact, you can omit the bananas all together to make applesauce muffins!
Instructions
- Mix the mashed banana, sugar, egg and margarine together. Set aside.
- In a separate bowl, mix together baking soda, baking powder, salt and flour.
- Mix wet and dry ingredients all together!
- Pour into greased muffin tins.
- Bake in 350 °F (177 °C) oven for approximately 20 minutes.
Your Stand Mixer is Your Best Friend in Baking
I love my mixer, and it’s gotten a lot of use throughout the years. I like to do most of my baking in my mixer because it not only saves time, it makes clean-up that much easier. One bowl to wash up at the end? Yes please!
Traditionally in baking it is important to mix wet and dry ingredients separately, however, I have made this recipe both ways and I have not noticed any difference in their overall taste, so if you’re anything like me, you may wish to just toss it all together.
Baker’s Notes
These Banana Muffins are much more flavourful the next day, and they freeze very nicely too!
If you like walnuts, you can throw a handful of those in there as well for some added flavour and texture, or try adding chocolate chips, or better yet, BOTH. I also add in seasonal fruits like strawberries on occasion.
If you want to spice them up a little, you can add a tsp of cinnamon, and a little nutmeg as well. They smell fantastic baking when you add the spices. I always made mine plain when the kids were little, but they are teenagers now and spice is okay.


My house smells so amazingly good right now, and I am desperately trying to resist the urge to stuff 350 degree muffins into my mouth.
Thank you–my batch made 12 perfect muffins. I did use liners (I have had no luck with greasing, and have become a muffin chicken so I line them all now), and some vanilla just because I wanted to recycle the bottle and get it out of my pantry.

Thank you for sharing these recipes. I made these muffins today with my 3 year old. They turned out to be scrumptious and were a big hit in our family!! My bananas were small so I used 6. I also added some berries to half the batch. It was yummy with blue berries but this recipe can definitely stand alone!! Can this recipe work for a loaf as well? I Can’t wait to try the other recipes.
I love this recipe. It was soooo easy and fast. My 5 year old had a great time mashing the bananas and helping to mix everything together. We added pecans and chocolate chips. She couldn’t wait to try them (and she doesn’t try anything!!!!) I couldn’t believe when she polished off a muffin in no time. Thanks. I’ll be using this recipe over and over.

I just made these muffins and they were FANTASTIC!!! my whole family loves them and i will DEFINATELY! make them agian…i added 1/2 a cup of wal nuts and 1 cup of sugar(not half its way better with 1) cooked them 20 minutes and they came out perfect…golden brown and delicious!! i would reccomend them to anybody who wants a great tasting – easy to make snack.

Back to get this recipe. Printed it out about a year ago and somehow just recentley lost it in the shuffle. This is the best ever banana muffin recipe. You can alter it in many ways and it always comes out great. I think my favorite way is the original recipe.

I finally tried the carrot cake recipe a week or so ago and it was delicious, and I intend to make it again soon! I’ve made the muffins several times now, too, without the alterations I made that I mentioned in my other comment – only thing is I put a bit less baking soda and a bit less baking powder and salt – I sort of estimated how much I put in. I’m getting 10 big muffins instead of 12, or 12 with some that are smaller, but they are still so yummy… and easy and timely to make! 🙂
I just wanted to say THANX for having the greatest recipe for banana muffins posted as the first hit on a google search for it. I have been using a pre made version for years adding in my older banana’s but I doubt we will ever go back to those again. They are still too hot to each but my sensitive olfactory has already give it a thumbs up and as such my mouth is salivating. This recipe is great! I definitely suggest using 4 bananas vs 3. Also, I added a pinch of cinnamon and lots of walnuts. So tasty! Next time I will add a sprinkle of sugar on top.
Has anyone tried to use this recipe for banana bread? If so, did you change anything? How long did you bake it for?
I just finished making them with my three year old son and it was super easy and fast enough to keep his attention. After we were done and they were in the oven he asked to give me a big hug and he said, “fank (thank)you Momma, fank you for making muffins with me, I wuv (love) muffins.”. And here’s the great part, he ate one (no small feat for a picky eater). And you know what I did to!
We had three overripe banana’s that needed to be used, but a house full of people, so those three banana’s would not make enough muffins for everyone.
I tripled the recipe, threw in a large can of pumpkin, added some cinnamon and powdered cloves. The batter seemed a bit thick to me and I was worried they would come out too dry, but OMG, they were heavenly!
Those were the best muffins I’ve ever eaten. The texture was perfect, and they were so moist and delicious. This recipe is a treasure to hold onto forever 🙂
I have a muffin every day at breakfast and because I love change, I always search for new recipes. I tried this recipe for the first time today and I have to say that these muffins, by far, are the most moist muffin that I have ever made. I used whole wheat flour instead of white, and also added mini chocolate chips to the recipe and they are absolutely delicious! I couldn’t believe how moist they are; I only used 3 bananas. This one is definitely a keeper.
Made these last night and can only agree with everyone above: they were delicious yet easy to make!
I used small muffin cases and got 22 yummy things.
Most of them are gone already as I live with two people and we were all in the mood for lots of sweet stuff 😉

I only had 2 bananas so I added 1/2 cup of sweetened applesauce and reduced the sugar to 1/3 cup. Absolutely delicious!
I Love, Love, Love to bake and I am all about easy. I have a banana bread recipe and the top is always goey and the bottom dry so I wanted to do muffins. I found this and I see everyone wrote how wonderful they are so I am trying it but just smelling them I am excited. I didn’t have a egg (I know how do I not have a egg) but I used 1/4 cup applesauce so wish me luck!
I Had a whole bunch of overripe banana’s so I thought I’ll make a double batch of these muffins up and take them to work tomarrow. Well, they are not going to make it to work. I made one batch with chocolate chips and the second batch I added coconut and chopped pecans along with cinnamon,nutmeg and vanilla. I also substituted the sugar for brown sugar. Well family and nieghbors are eating warm from the oven faster than I can pull them out! I guess I have to keep this recipe and make again. Maybe next time I’ll wait until noones home! lol
We cleaned out the freezer this morning and decided to use up the bananas. Went online to search for a recipe and this was the first one that popped up under “easy banana muffins”. They are super easy and my 3 year old Laura loves them! Yumm she says. When I saw the website Cat can cook, it reminded me up a post I just received last week on facebook regarding your jewelery line. I can’t believe its the same person! Way to go Catherine. I always knew you were super creative. Keep up the good work with the receipes.
The only downside – Now I will have to use the rest of the frozen bananas to make protien shakes and get back on my diet after enjoying these with butter and of course a couple glasses of milk to wash it down!

This is the best recipe I have come across in a long time! You cannot miss! I replace the butter with yogurt and have added other types of fresh and or frozen fruit and they always taste perfect! I cannot say enough!
Just made these muffins for a friend who just had a baby (her 7th boy!) – hoping she and her family enjoy them. They smell wonderful and look like they should be photographed and put in a magazine! I’ll whip them up again for my own family next time I have 4 overripe bananas…can’t wait!

Just made them this afternoon and they were pretty easy to make. I switched it up a bit with whole wheat flour and a dash of vanilla. They turned out great, super moist! Totally forgot to add the walnuts in though…

Everyone seems to have a different reason for making this. Mine was a lil weird :). i am veggie and unfortunately dont find muffin without egg in stores so thought i will bake myself. Second reason is the weird one, i found muffin pan in store on sale and bought it. After lying in my kitchen for several days, my wife asked, what for u bought it ? :). And I searched the net and gave this one a try.
Mistakes:
I tried to use Blender to mix the contents. Didnt work though and because of which i had to clean more and it took more time.
Results:
Couldnt believe my eyes, i did see them in store, but in my oven. Its just awesome !!! great smell and shape.. I didnt eat ’em but thanks a ton for this …

I have an awesome banana bread recipe, but it makes terrible muffins. Googled for a muffin recipe tonight b/c I want to freeze the few escapee muffins my husband and I don’t eat! This is great, and thank you for sharing it. We added dried cranberries for extra flavor and nutrition. Yum.
I am going to make a double batch tomorrow, and in one of the batches, I am going to attempt adding Cocoa Powder, to make Chocolate Banana Muffins! MMmmmmm!!! have I mentioned I am a Choco-holic? 😀

I “googled” for a new banana muffin recipe and your recipe just said “try me!”…..so I did. Almost too easy to be true! Will pass it on. I tried the original recipe, with half sugar, half Splenda mix. Tried one for taste and it was good, but will serve them tomorrow after they have had time to equilibrate, and they’ll be great! wow, glad to see comments are still being added to this post. made these this morning. i only had 2 ripe bananas, but i had 3 peeled cortland apples in the fridge, which i reduced to applesauce and added instead of the extra bananas. the muffins came out kind of loose and overmoist, but they are totally delicious. also, because the apples were a little tart, i used the full cup of sugar. i will be saving this recipe and making it again. thanks, cat!

I have been without an oven for 1-1/2 years and have been looking forward to baking again. My daughters loved these muffins because they tasted “yummy”!!
I didn’t have any baking soda, so I did a substitution – 1/4tsp baking soda and 1/2 tsp cream of tartar. I also added 1 tbsp of flax seed for extra nutrition.

I googled “banana muffin” and it brought me to this recipe. I was very easy to make. I sifted all the dry ingredients and added vanilla and chocolate chips. I ended up with 17 1/2 regular size muffin. It was very moist and not too sweet. This recipe is a keeper.

These were great and easy! I substituted applesauce for butter, used whole wheat flour, added a little vanilla and cinnamon and added blueberries to some of the muffins. They turned out great and my daughter (3 yrs) likes to take her mini muffin and put on applesauce! THANKS!
