These Banana Muffins are easy, delicious and quick to prepare. Plus, you probably have everything you need to make them in your kitchen right now. A favourite with kids and adults alike, these moist muffins are sure to please.
I have yet to meet someone who doesn’t love my Banana Muffins. I have many loyal followers who’ve been making these since day 1 – that’s nearly 14 years now!
Between the mixing and baking, the entire process only takes about 30 minutes.


Ingredients
- 3 or 4 large bananas, mashed (the more bananas the moister)
- 1/2 cup white sugar (original recipe calls for 1 cup, but I don’t like them too sweet)
- 1 egg, slightly beaten (or equal amount of egg replacer)
- 1/3 cup melted margarine or butter
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1 1/2 cups flour
A Quick Note About Substitutions
These days it is common for folks to need to substitute certain ingredients due to dietary restrictions. If this is the case, this is a great recipe for accommodating substitutions. I’ve made them and forgotten the egg entirely, and they still turned out just fine. Another tip if you are short a banana or two, is to substitute applesauce for one banana. I find about 1/2 cup does the trick. In fact, you can omit the bananas all together to make applesauce muffins!
Instructions
- Mix the mashed banana, sugar, egg and margarine together. Set aside.
- In a separate bowl, mix together baking soda, baking powder, salt and flour.
- Mix wet and dry ingredients all together!
- Pour into greased muffin tins.
- Bake in 350 °F (177 °C) oven for approximately 20 minutes.
Your Stand Mixer is Your Best Friend in Baking
I love my mixer, and it’s gotten a lot of use throughout the years. I like to do most of my baking in my mixer because it not only saves time, it makes clean-up that much easier. One bowl to wash up at the end? Yes please!
Traditionally in baking it is important to mix wet and dry ingredients separately, however, I have made this recipe both ways and I have not noticed any difference in their overall taste, so if you’re anything like me, you may wish to just toss it all together.
Baker’s Notes
These Banana Muffins are much more flavourful the next day, and they freeze very nicely too!
If you like walnuts, you can throw a handful of those in there as well for some added flavour and texture, or try adding chocolate chips, or better yet, BOTH. I also add in seasonal fruits like strawberries on occasion.
If you want to spice them up a little, you can add a tsp of cinnamon, and a little nutmeg as well. They smell fantastic baking when you add the spices. I always made mine plain when the kids were little, but they are teenagers now and spice is okay.

I needed to find a recipe for banana mini muffins that my son’s preschool class could help cook- my 4 year old helped with every step- from the peeling, to the mashing, to the measuring and stirring, to the mini-tin filling- and to the eating of course! These were SO moist with 4 bananas! Made about 30 mini muffins- baked for 10-12 mins

Hey, i stumbled upon your website whilist looking for a banana muffin recepie. I am 14 and pretty much hopless at baking. I need a good banana recepie that I could use to make at school tomorrow – and yours looks like THE ONE! =)
But being the hopless my-muffins-never-turn-out-good person I am, I would like to just check about a few things…what flour is needed for this recepie? & how many do these make? If they make over 10 muffins, is there a way i could lessen it to maybe 8 muffins or something(because i can’t pack so many from school to home)-if yes how do i go about doing that?

I was really eager to try out your banana muffin receipe with all the positive feedbacks. The muffins turned out alright i must say. I lessen the sugar to 1/4 cup and 4 small bananas. The sweetness and the moisture is just nice for me but the muffins somehow smell a little flour. Any advice on what you think could have gone wrong?

They smell like flour eh? Hmm…absolutely no idea. I have tried them every which way imaginable, and have never ever had an issue…
Do try them again Cass, perhaps using one of the variations, like applesauce in place of the bananas to make aple muffins, or pumpkin muffins but using canned pumpkin?

There are so many rave reviews I was starting to think they were fake. But, these are, in fact, the best muffins in the world! and I know how to make them worth 2 POINTS!!
Replace the fat with1/3 cup apple sauce and 3/4 cup white flour and 3/4 cup whole wheat flour and- Voila- 2 point muffins. Yum!
So Easy and “Deewishess”
Well I did mean to follow the recipe, but once again got carried away!
I halved the sugar again to 1/4 c and reduced the butter by 1 T, substituting 4 oz stale milk chocolate Hershey kissees (which I melted together with the butter). I didn’t taste much chocolate in the final product; however this is the best, moistest muffin I’ve made yet.
I used approx 4 frozen bananas in this, and I intend to try it with the pumpkin (that’s frozen too) as suggested, then some not-so-tasty applesauce I have languishing in the fridge. A great de-clutter recipe!
First batch is in oven, added cinnimon and ok weird almond granola…forgot the sugar …oops that’s what mis en place is for huh? The second batch has pumpkin and sweet potatoes with pecans. Added ginger, nutmeg and cinnimon. OH yeah and the sugar…It’s a great basic recipe that you can do anything with…good job Cat!!!

hey! so i cooked these muffins for my home ec task and they came out perfect! I cooked about 12 of them and i only got to bring back like 3 home because they were such a hi! Great easy recepie!

Very easy, light and flavourful. Did I mention moist? I used 4 bananas and reduced sugar to about 3 tbsp dark brown sugar, and the melted butter to about 1/4 cup. Also replaced about 1/2 cup flour with 1/4 cup ground golden flax seed and a few tbsps of raw wheat germ. I threw in about a tbsp of apple butter to compensate for the reduced fat. The muffins are moist and fluffy and my roommates love them. This is a really great recipe to play around with.
I cannot bake to sae myself i have now made the banana muffins twice and both times were a success i even added choc chips. So glad i can finally cook somethinng with out stuffing them up LOL
