These Banana Muffins are easy, delicious and quick to prepare. Plus, you probably have everything you need to make them in your kitchen right now. A favourite with kids and adults alike, these moist muffins are sure to please.
I have yet to meet someone who doesn’t love my Banana Muffins. I have many loyal followers who’ve been making these since day 1 – that’s nearly 14 years now!
Between the mixing and baking, the entire process only takes about 30 minutes.


Ingredients
- 3 or 4 large bananas, mashed (the more bananas the moister)
- 1/2 cup white sugar (original recipe calls for 1 cup, but I don’t like them too sweet)
- 1 egg, slightly beaten (or equal amount of egg replacer)
- 1/3 cup melted margarine or butter
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1 1/2 cups flour
A Quick Note About Substitutions
These days it is common for folks to need to substitute certain ingredients due to dietary restrictions. If this is the case, this is a great recipe for accommodating substitutions. I’ve made them and forgotten the egg entirely, and they still turned out just fine. Another tip if you are short a banana or two, is to substitute applesauce for one banana. I find about 1/2 cup does the trick. In fact, you can omit the bananas all together to make applesauce muffins!
Instructions
- Mix the mashed banana, sugar, egg and margarine together. Set aside.
- In a separate bowl, mix together baking soda, baking powder, salt and flour.
- Mix wet and dry ingredients all together!
- Pour into greased muffin tins.
- Bake in 350 °F (177 °C) oven for approximately 20 minutes.
Your Stand Mixer is Your Best Friend in Baking
I love my mixer, and it’s gotten a lot of use throughout the years. I like to do most of my baking in my mixer because it not only saves time, it makes clean-up that much easier. One bowl to wash up at the end? Yes please!
Traditionally in baking it is important to mix wet and dry ingredients separately, however, I have made this recipe both ways and I have not noticed any difference in their overall taste, so if you’re anything like me, you may wish to just toss it all together.
Baker’s Notes
These Banana Muffins are much more flavourful the next day, and they freeze very nicely too!
If you like walnuts, you can throw a handful of those in there as well for some added flavour and texture, or try adding chocolate chips, or better yet, BOTH. I also add in seasonal fruits like strawberries on occasion.
If you want to spice them up a little, you can add a tsp of cinnamon, and a little nutmeg as well. They smell fantastic baking when you add the spices. I always made mine plain when the kids were little, but they are teenagers now and spice is okay.

hi i used this recipe and the only modification I had was subbing the plain flour with self rising flour. I was also careful not to overstir, but my muffins still turned out flat. It tasted good but not light and fluffy, most importantly it lacked the dome shaped top of most muffins! Can anyone help me on this???
These are now a staple in this house. I sometimes make adjustments depending on my mood. I have used half white flour and half oatmeal, it gave them a whole new texture and were yummy. I also add choc chips when I make them. I also use 5-6 bananas and use 1/4 c of butter. they just out great every time. I love this recipe.

Hi I added 1/4 cup of flax seed to the recipe and i used whole wheat flour and they were very good and more healthy. Of course a few choc chips where thrown in for good measure …… loved them!!
WEEE! Breakfast is in the oven! Haven’t tried them yet but just wanted to add that i included some strawbwerries mini hershey’s kisses, halfed the sugar with brown sugar and added a tsp of vanilla!! Yummy can’t wait to try them!

I’ld never baked anything in my life but wanted to give it a go in return for their kindness and helping me to settle in…… thank god I came across this recipe – these muffins were easy to make and went down famously- and quickly! – they are gorgeous, even my hubby was impressed with his new baker wife…. he usually does the cooking, I’m that rubbish! – Well better go, off to make some more…..
So easy! I used 3/4 cup of sugar and added 2 diced, partly cooked apples. Soooo good. To do the apples i just peeled, diced, put in a bowl with some water and microwaved for approx 1-2 minutes (depending on microwave power) until they were soft but still had a bit of crunch. I couldn’t resist and ate one (or two) while they were still hot and the top was a little crisp and sort of caramelised. OMG! LOVE IT!!!
I cooked them tonight with my roommate and they were great. We changed them up a bit using 1/2 cup whole wheat flour, 1/2 while flour, 1/2 rolled oats instead of 1 1/2 cups white flour and they came out great. Thanks for the recipe, we loved them!

I confess, I did not have faith in these, but they are PERFECT! I will definitely replace my former banana muffin recipe with these.
I used the following:
1/3 c butter
3/4 c golden sugar
1 large egg
3.5 bananas (1 small, 2 large, and a 1/2)
1 tsp vanilla
1.5 c stoneground spelt flour
1 tsp b soda
1 tsp b powder
salt
about 2/3 c chocolate chips
I also filled seven muffin cups to the brim and sprinkled brown sugar on top because my son asked for big muffins with crunchy tops. That’s exactly how they turned out.
Oops, I didn’t melt the butter though. I beat the egg in my Kitchenaid, added the butter and beat that some more, then I added the sugar, beating again, and then the bananas bit by bit. (And then threw in a little vanilla.)
I mixed the dry ingredients in a measuring cup and folded them carefully with the chocolate chips into the wet ingredients, leaving the batter quite dry and flour-y.
The muffins are great! I add chocolate chips to mine! Yum!
This is a really awesome recipe and easy to make it successfully. You have to try!!!!!

i’ ve made these muffins loads of times and today i am making them with my friend today! 🙂 and try adding cinneman it gives them so much more flavour mmmmmm yuuuumy ! They are moist, delicoius,light and fluffy. Try adding walnut it gives them a very nice crunch (walnuts r good for the brain lol) It’s snowing here in London so i Can’t wait to have lovely warm muffins after dinner (or before heehete)

I usually search for and use different ones whenever I’m baking and they turn out all right, but this one I really loved and the kids did as well. I did make a few additions…I had 5 bananas instead of 4 so I used all 5 and I added a tsp or so of cinnamon because I just love the taste of cinnamon in my baked foods. Also, I threw in a handful of chocolate chips at the end. Turned out great…very moist tasting. I’m going to try your applesauce muffins next time. We have a couple jars of applesauce that the baby doesn’t seem to like as much anymore. Would be a good use for it, huh? Thanks again.
Let me start by saying that I’m the furthest thing from a cook – especially a baker! : ) I made these muffins last night (so that we wouldn’t have to throw away our almost rotten bananas) and they were so easy! They tasted better then I could’ve imagined! Wow these were so easy and I DO NOT BAKE! I had too many bananas and with the economy the way it is I just could not waste them. I made a few alterations hope you dont mind!
I used 4 huge bananas
I substituted Raw Sugar ( almost 1/2 cup) and Stevia ( Lower calorie)
I used whole wheat organic flour
I did everything else the same as listed
These were so incredibly moist and not very sweet, the taste and sweetness was all banana!
I am so proud of myself considering I have really never baked anything other then slice and bake cookies!

These muffins came out super moist and not too sweet like most of the other recipes. I sprinkled some brown sugar and walnuts on top just before I put them into the oven to add my own touch. I like my muffins larger so I made 8 large muffins instead of 12 and increased the baking time to 30 mins. This recipe is definately going into my favorites.

I used wholemeal flour & added 1/2 a cup of chopped dried dates briefly soaked in boiling water.
