As delicious as it is easy, this recipe for fancy mashed potatoes is a healthy alternative to the buttery ones we all love – but I promise you won’t even miss the butter in this fabulous side dish.

Cheesy Garlic Whipped Potatoes with Parsley

4-5 medium potatoes, washed and peeled
3 cloves garlic, peeled and left whole

¼ cup milk

1/4 cup grated Romano or Parmesan cheese

3 TBSP light cream cheese
¼ cup fresh parsley, chopped fine
Sprinkling of garlic salt and pepper to taste

Boil potatoes with garlic cloves until soft and mash all together. Add broth and cheeses and mix on low speed with electric mixers. Once creamy, turn off mixers and add parsley, and mix to incorporate.
