A cheesecake a day keeps the doctor away? Oh, how I wish. If there is any one food I love, this is it! This particular one is remarkably simple to make. Just work slowly and patiently, and you’ll have a perfect masterpiece by the time you’re done, though you likely won’t want to stand around staring at it, you’ll just want to dig right in.

Creamy Oreo Cookies Cheesecake

1 package Oreo Cookies, divided
1/4 cup margarine or butter
3 packages cream cheese
3/4 cup white sugar
1 cup sour cream
4 eggs
2 tsp vanilla extract

Preheat oven to 350 degrees F. Divide Oreo cookies, half and half. One half, chop fine for crust, the other, chop coarse, for inside the cake. Mix the fine crumbs with the softened margarine and press into the bottom of a 9 inch spring form pan. Next, mix the cream cheese, sugar and sour cream with a hand mixer until smooth. Add vanilla, and then eggs, one at a time until incorporated. Add coarsely chopped crumbs, and mix to distribute throughout batter. Pour the batter into the pan on top of the crumbs. Bake in a 350 degrees F oven for 55 minutes to 1 hour. Keep a  close eye on it, and if it is browning too much on the top, turn it down a little to 325 or so.  The cheesecake will need a few hours to set. If you have a cool place in your home, or room in your fridge, I suggest keeping it cool until ready to serve. It will firm up nicely, and slice easily.
