Thanks to a blog reader named Gayle, I am passing along this recipe for gluten-free granola. Here is what she sent. Thanks so much Gayle!
“I buy my Gluten Free Rolled Oats (Bob’s Red Mill)in the health food section at
Fortinos (Zehrs)” Most health food stores would also carry them. I have also included a Gluten Free Granola recipe which you may want to pass on to other Celiacs”
4 cups gluten free oats
1/2 cup pine nuts
1/2 cup sunflower seeds
1/2 cup shredded coconut
1/2 cup dried cranberries
1/2 cup chopped dates
1/2 cup chocolate chips
1 cup sliced almonds
3/4 cup peanut butter
3/4 cup honey
1 teaspoon vanilla
1/3 – 1/2 cup butter or margarine
Combine all dry ingredients into a large bowl. Heat peanut butter, honey,
vanilla and margarine in microwave. Once the peanut butter mixture is combined,
mix it with the dry ingredients until the oat mixture in moistened. Spread on a
parchment lined cookie sheet. Bake for 30 – 45 minutes at 300F. (The granola
will still be soft at this point, but will get crispier as it cools). Cool,
break granola apart and store in sealed container in refrigerator.
Thanks Gayle! I usually buy my GF stuff at Zehr’s too, but mine only carries the organic oats from Bob’s Red Mill, not the GF ones. My next step is to check out some of the health food stores around town.
i am always on a gluten-free diet and we use gluten-free substitutes when baking bread`”;
my mom and dad had been on a gluten free diet ever since they were kids~`;
If you ever go over to the States – the Meijer stores have a really great gluten free selection. They run a very big selection of Bob’s Mills products too.
