This is a little taste of summer right in the middle of our Canadian Winter! Admittedly, this winter has so far, been very mild but I was craving a light and healthy summer-type meal and this fit the bill perfectly!
You can make the souvlaki ahead of time, and toss these together in minutes at mealtime!
Greek Souvlaki in a Pita
2 chicken breasts, cubed
1 lemon, juiced
2 TBSP olive oil
2 cloves garlic, minced
1/2 cup lettuce
1 large tomato, chopped
1/3 cup sweet onion, chopped
1/2 cucumber, peeled and chopped
1/2 cup feta cheese, crumbled
2 TBSP tzatziki sauce
4 Greek Style Soft Pitas
Combine the lemon juice, olive oil, garlic and salt & pepper in a medium bowl, and add in cubed chicken. Toss to coat, and allow to marinate for about an hour. If you are cooking on the grill, thread the chicken onto skewers first. Grill about 8 minutes, until the chicken is cooked through. If cooking indoors (as I did today) preheat a large skillet to high heat. Add in chicken and brown it lightly. Once cooked through, assemble the pitas by spreading each with tzatziki, and top with the meat and vegetables. Opa! 😉
