Delicious, fresh and summery – this recipe was invented after a reader asked if I did much Asian cooking…I LOVE to make up new recipes, so I based this on a satay sauce recipe and added to it to make it perfect.
This dish was superb, flavourful, and appealing to my fussy five-year-old too.
Satay Chicken Udon Noodles
3 TBSP oil
2 chicken breasts, sliced
salt and pepper
2 cloves garlic, minced
1 small piece ginger, minced (reserve half)
1 package cooked udon noodles
Sauce:
3 TBSP smooth peanut butter
3 TBSP soya sauce
1/2 cup chicken broth
other half of ginger
2 cloves garlic
2 TBSP honey
1 bunch spring onions, sliced
1/4 cup fresh cilantro, chopped
1 cup bean sprouts
Heat oil in large wok. Add chicken and cook well. Season with salt, pepper, garlic and ginger. Turn heat way down, and place the noodles on top of the cooked meat, and cover and keep heat low. In a small sauce pan, heat all sauce ingredients over medium heat whisking together. Once incorporated, pour over noodles and meat and stir to loosen noodles. Once heated through, serve into large bowls and top with onions, cilantro and sprouts. Serve with spring rolls and a bubble tea for dessert. Yum!

This was seriously SO good. I doubled the sauce and didnt put any broth and added chili pepper flakes to both the sauce and the noodle mixture. Also increased the garlic. Served with steamed edamame for appetizer and bananas foster for dessert. Amazing, thanks!!
