I adore mushrooms. I’m not sure why, but they are just one of those foods I cannot get enough of. So, coming up with new ways to cook with them is always lots of fun. I think this is probably about the forth different *type* of stuffed mushrooms I’ve come up with. They are slightly different than the usual, and they taste divine!
12 medium mushrooms, washed, stems removed and diced
1 TBSP oil
1 small onion, diced
1 rib celery, diced
2 cloves garlic, minced
1 sausage, casing removed
1 1/2 TBSP cream cheese
Gruyere or Mozzarella, sliced into small pieces to top each mushroom
Saute the mushroom stems, onion, celery, garlic and sausage meat, until cooked through. Add cream cheese, and heat. Set mushrooms in a baking tray, and fill each of the mushrooms with the vegetable mixture, overfilling and mounding extra on top. Top each mushroom with a piece of the cheese. Bake in preheated 375 degrees oven for 20minutes.
