I spent some time at the bulk store this morning, perusing the various grains, nuts and seeds looking for healthy and yummy ingredients to add to my cooking repertoire. I brought home some sun butter on a whim, thinking it might be a nice treat. Well, I was very pleasantly surprised at *just* how much I liked it, so I decided to incorporate it into a recipe this afternoon. We eat a lot of granola around this house, and I’m always playing around with it trying new fruit and nut combinations. Not only is it tasty, but it’s so good for you (albeit slightly high in calories and *good* fats) It’s a great breakfast cereal with milk, or a topping for fresh yogurt and fruit.

If you’re a fan of sunflower seeds, you really must try this recipe. The sun butter gives it a delightful flavour, and the seeds give a delicious crunch! Great to grab on the go!

Sunflower Granola

4 cups Oatmeal (I used steel cut oats, not quick)
1 1/2 cups liquid honey
1/2 cup sun butter (sunflower seed butter)
1/2 cup canola oil
1 cup raisins
1 cup sunflower seeds
1/2 cup dried cranberries

Mix all ingredients until well coated in a large bowl. Spoon onto a large cookie sheet, and bake in a 275 degrees F oven for 40 minutes, turning about every 10 minutes. Let cool (the granola will harden as it cools)
